1 large can (29 ounces) sweet potatoes (drain off some of the syrup)
3/4 stick margarine or butter (melted)
1 1/4 cups sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2 eggs
Topping:
3/4 cup cornflake crumbs
1/2 cup chopped nuts (optional)
1/2 cup brown sugar
3/4 sick melted margarine
Warm potatoes in syrup and mash to a very smooth, consistency. Use a blender, food processor or mixer. Add other ingredients and mix well. Place in a 2-quart casserole dish. Bake uncovered 20 minutes at 400 degrees. Mix together topping, spread on potatoes and brown for another 10 minutes. Serves 4-6.
