Shrimp-Cucumber Appetizer

Shrimp-Cucumber Appetizer
  • 2 medium cucumbers, cut in half length wise with seeds scooped out.
  • 1 can broken shrimp, mashed
  • ½ cup mayonaise
  • ½ cup green onions, chopped
  • 2 teaspoons lemon juice
  •  teaspoon salt and pepper
  • Mash shrimp and add other ingredients.
  •  Make flat bottom (Slice off layer of skin). Let drain.
  • Fill with shrimp and sprinkle with paprika. Slice filled cukes in 1/2" slices.
