Shrimp-Cucumber Appetizer
- 2 medium cucumbers, cut in half length wise with seeds scooped out.
- 1 can broken shrimp, mashed
- ½ cup mayonaise
- ½ cup green onions, chopped
- 2 teaspoons lemon juice
- ⅛ teaspoon salt and pepper
- Mash shrimp and add other ingredients.
- Make flat bottom (Slice off layer of skin). Let drain.
- Fill with shrimp and sprinkle with paprika. Slice filled cukes in 1/2" slices.
