Chocolate Mousse
- 1 cup butter
- 2 cups powdered sugar
- 3 ½ squares chocolate , melted/cooled
- 4 eggs
- 2 teaspoons vanilla
- 1 teaspoon peppermint extract
- 1 ½ cups pecans
- Beat in mixer-butter and powdered sugar. Beat for 20 minutes.
A Add chocolate, eggs (one at a time), vanilla, peppermint extract.
Line bottom of paper cups with nuts, then fill with mixture and top with nuts. Place in muffin tins and freeze.
