Lemon Ice Box Dessert
- 6 eggs
- 1 cup sugar
- ½ cup lemon juice
- 2 lemons, rind
- 2 orange , rind
- 3 tablespoons sugar
- 2 cups whipped cream
- 3 cups vanilla wafer crumbs
- Cook until thick over hot water, 6 unbeaten egg yolks and 1 cup of sugar. Cool.
- Add lemon juice, lemon and orange rinds.
- Then add 6 beaten egg whites, 6 Tablespoons sugar. Add whipped cream.
- Line pan with vanilla wafer crumbs leaving some crumbs for top. Add mixture and sprinkle remaining crumbs on top. Freeze quickly. Serve same day.
