Lemon Ice Box Dessert

Lemon Ice Box Dessert
 
  • 6 eggs
  • 1 cup sugar
  • ½ cup lemon juice
  • 2 lemons, rind
  • 2 orange , rind
  • 3 tablespoons sugar
  • 2 cups whipped cream
  • 3 cups vanilla wafer crumbs
  • Cook until thick over hot water, 6 unbeaten egg yolks and 1 cup of sugar. Cool. 
  • Add lemon juice, lemon and orange rinds.
  • Then add 6 beaten egg whites, 6 Tablespoons sugar. Add whipped cream.
  • Line pan with vanilla wafer crumbs leaving some crumbs for top. Add mixture and sprinkle remaining crumbs on top. Freeze quickly. Serve same day.
