Microwave Caramels

Microwave Caramels
 
  • 1 cup butter
  • 2 ⅓ cups brown sugar, packed
  • 1 cup light corn syrup
  • 14 ounces sweet condensed milk
  •  teaspoon salt
  • 1 teaspoon vanilla
  • ½ cup walnuts, chopped
  • In 2 quart microwave bowl combine butter, sugar, milk and salt. Microwave on high 3-4 minutes stirring once after 2 minutes. 
  • When butter melted, stir well. Microwave on high 14 minutes or until mixture reaches 245. No stirring is needed.
  • Remove from microwave. Stir in vanilla and nuts. Let stand 10 minutes, stirring several times. Pour into greased 13x9 pan. Refrigerate until cool. Invert pan; carefully tap out whole pan; cut into squares. Wrap in wax paper and store in fridge or freezer
