1 1/2 cups fresh mushroom slices
1/4 cup onion, diced
1/2 cup cheddar cheese, shredded
1/2 teaspoon basil
salt and pepper, to taste
Directions:
In shallow 1-quart baking dish, layer zucchini, mushrooms, and onion. Sprinkle with cheese and basil. Cover and bake at 350 degrees for 20 minutes. Uncover and bake 10 minutes longer or until vegetables are tender.
