Cinnamon Apple Jelly
- 4 cups apple juice
- 1 2 1/2 ounce MCP
- red food coloring
- 4 ½ cups sugar
- 3-4 tablespoons red cinnamon candies
- Combine apple juice, pectin, and several drops of food coloring in a large saucepan. Bring to hard boil.
- Stir in sugar and candies. Bring to full boil for 2 minutes, stirring constantly.
- Remove from heat and skim. Pour into jars and seal.
- Variations: Mint-Apple: Follow directions for Cinnamon Apple except combine 6 drops green food coloring and 1 cup lightly packed mint leaves with juice and pectin. Omit red food coloring.
- Servings/Yield: 8 glasses
